 Laurent Smallegange, a young chef and co-owner of Restaurant Spetters, he started working at the age of 16 in de Kromme Watergang**, when he finished school at the age of 18, went to Oud Sluis***, after this experience he started working with Jonnie Boer in de Librije***, to begin his own restaurant, in his home village at the age of 23.

In november 2013 he earned his first Michelin star, and became the youngest chef of the benelux  with a Michelin star(25)

Also he became talent full chef & Promise of the Year 2015 in the guide Gault & Millau, the restaurant gained 16/20 and was one of the 2 restaurants of the Netherlands who rised the most

from 12 to 16.

 

 

In Spetters you find  a lot of fish inspired dishes, local products and some influences from all over the world.

 

Laurent follows the season, and gets inspired by all of the best products you find in the region, cheese, fish, local farmers, scallops, shellfish
